Bottle Guard i know many of us escape when we hear this vegetable name .. Its good for health and has more nutritious value.Bottle gourd is extremely popular for reducing high blood pressure and keeping your heart healthy I use to make dudhi muthiya for dinner .. My kids love it so i cook in the morning and send in their school lunch too. Its very healthy and i am damm sure if u make it ur kids too will love it ..
‘Muthia’ comes from Western part of India … mostly eaten in Gujarat and Rajasthan .. It can be eaten as breakfast, as a ‘tea time’ snack or for lunch or for dinner…
So it can be enjoyed at any time..
1 cup Grated Dudhi ( Bottle Gourd)
1 cup steamed rice
1 cup wheat flour
2 tsp Oil
2 tsp Mustard seeds
1 tsp jeera
1 tsp urad dal
1 tsp grated garlic
1 pinch of Asafoetida (Hing)
2 tsp red chilli powder (based on ur taste how spicy u like to eat )
1 tsp daniya powder
1/2 tsp haldi powder
2 green chilli
7-8 curry leaves
Salt to taste
Water to knead the dough and for steaming the Muthias
1)Peel the skin of the Dudhi and grate it. Squeeze out all water from the Dudhi
2)Take a big plate add one cup wheat flour, dudhi,
and add one cup of steam rice.. mix it then add 1 tsp chilli posder, 1/2 dhaniya powder and 1/4 haldi powder, little salt and oil
Mix the ingredients well if needed add little water and make a dough keep aside for 5 min
3) Apply some oil to both your palms, and start making cylindrical shapes out of the dough, by taking small portions of the dough at a time like this
4)Now take a big kadai add water,let it boil then add muthias to them, close it with a big lid and cook for 20 min. To know if the Muthias are done, prick it with a fork or a knife or a tooth pick and see if it comes out dry. If not cook it more.
5)Once all the Muthias are cooked,take out allow it to cool and cut small round pieces of each cylinder
6)Now take a pan add Asafoetida (Hing),Urad daal,jeera,Mustard seeds one by one .. then add garlic , green chilly and curry leaves fry it.. now add the remaining dry masalas fry add lemon and add the muthias and mix well frt it for 5 mins
7)The hot muthias is ready to serve. Garnish it with coriander leaves and serve it with Khadi or chutney or ketchup…
