Rajasthani Mirchi Vada

This Dish is  made of green peppers stuffed with a masala aloo filling and deep fried makes a mouthwatering snack for people who love hot & spicy food. I make this mostly whenever rains to enjoy the monsoon with family and have fun …

 

Ingredients:

For Batter
• 1 cup Gram Flour/Besan
• ¼ tsp Turmeric Powder
• ¼ tsp Red Chili Powder
• Salt

For Stuffing:
• 3-4 Medium sized Potato boiled
• 2 Small Green Chilies Finely Chopped
• ½ tsp Red Chili Powder
• ½ tsp Amchoor Powder
• ½ tsp Cumin Seeds Powder
• Pinch of hing
• Salt
• 2-3 tbsp Chopped Coriander Leaves

• 8-9 Big large green peppers
• Oil for Deep Frying

Method:

  1. Slit the green chillies, remove seeds and keep aside.
  2. Boil potatoes with salt. Peel and mash them well. Add  hing, red chilli powder, amchoor powder, Cumin Seeds Powder and coriander leaves. Mix well. Make a thick batter with the flour, turmeric powder and salt.
  3. Mix the besan with the salt and enough water to form a thick, smooth paste.
  4. Take the green chillies Fill with the potato filling.
  5. Heat the oil till a drop of batter dropped in comes up at once.
  6. Dip the pepper in the batter, and drop it into the hot oil.
  7. Lower the heat to medium and fry till a golden colour.
  8. Lift out and transfer on to an absorbent paper, before serving.
  9. Serve hot with green and sweet imli chutney or tomato sauce!!

Easy Puli Sadam – Tamarind Rice Recipe

Tamarind rice is a popular dish in South India.This is a traditional South Indian Tamil Brahmin recipe..   Puli Sadam is best for lunchbox and for travel as it doesn’t get spoiled easily, also the resting time enhances the flavour of Tamarind rice/Puli sadam,Tamarind rice/Puliyodharai are very famous for tongue tickling taste, I’ve given the step by step pictures for beginners & bachelors.. try and enjoy with your family ..

Ingredients :

Cooked Rice – 2 cups
Tamarind – 1/4 cup loosely packed
Fenugreek seeds – 1/4 tsp
Water – as required
Salt – to taste

Oil, 1-2 teaspoon

Sesame oil, 1 1/2 teaspoon
Channa Dal, 1 tablespoon
Urad dal, 1 tablespoon
Sesame seeds, 1 tablespoon
Coriander seeds, 1/2 tablespoon
Red chillies, 4-5 nos.
Fenugreek seeds, 1/2 teaspoon

 

Method:

1)Soak tamarind in 1 cup water, mash it well with your hands and Set aside.

2) Cook rice and allow it to cool …keep aside

3) Heat oil – add mustard seeds and urad dal let it splutter.Add red chillies, curry leaves, turmeric powder and hing. Saute for a minute.

4)Strain and add tamarind pulp.Let it boil.Cook in medium flame.

5)Cook till it becomes thick.Then add fenugreek seeds and cook for 2mins.

6)cook for few more mins till it becomes like a thokku(thick),then switch off. Add cooked rice and mix well

Leftover Roti (Chappathi) Recipe

Many of you have been asking me to post a recipe to put in the lunchbox for kids and I can tell you this is perfect for that. This is a great recipe for leftover roti or chapati. Never throw extra leftover roti out again.Use them in a way again to make it healthy loving way to eat again. This leftover chapatis recipe can help you repurpose your chapatis into something new — and quite delicious.

Ingredients

Chapati- 6 cut into thin strips

Onion- 1 large fine sliced

Chilli Powder-1 tsp

Turmeric Powder / Manjal Podi-1 tsp

Garam Masala Powder-1 tsp

Salt to taste

Lemon juice 1 tsp

water 4 cups

Oil – 1 tblspn

Method:

  1. Heat oil in a wok or kadhai. Add onions and green chilli and fry for 3 mins.
  2. Season with salt, Add all spice powders and mix well.
  3. Add the water and bring it to boil then add the roti pieces and boil for 5 mins until it absorbs all water
  4. Garnish with coriander leaves and serve hot or put in lunch box.

Hi friends What is the first thing that pops up in your mind when you think about food in Chennai??? Im a big foodie and I always carve for  khakra sandwich and paani puri homade as well in Raj snacks … Raj bhaiya always make us yummy sandwiches, puffs corn cannopes , paani puri etc… Whenever i gt time i hang out to raj snacks and enjoy food unlimited with my friends as well family …

I wonder always these small vendors earn how much and how popular they are ??? They do lot of hard work but earn less as they give us food at cheaper rat.. So i thought to write about these vendors  mainly my favorite Raj snacks  and make them famous in online…. I always order Kakra sandwich which is my favoriteand my kids love paani puri …

I loves the flavour of his pani puri and do not mind standing in a queue for it. My kids love it the amazing mixture of the tiny puri, aaloo mix with salt, spice and everything nice taste delicious and yummy

Puffed Rice (Pori) Upma Recipe

Do u Want an easy and delicious tea time snack for a nice evening?  How about trying Pori upma?  Its really very easy and quick to make and yet very yummy and healthy. Puffed Rice upma is a simple bachelor Recipe . If you are planning to make an instant breakfast or a light evening food, then the Puffed rice  upma is a cuisine that can meet your needs …. The puffed rice is also known by such names as uggani, buggani, vaggani or borugula upma….Most of us have puffed rice all time in our home as it is very easy to make bhel puri or just give the plain pori for kids as a snack. Using the same puffed rice, adding few more veggies and make it a little healthier and also tasty. It could be made at busy mornings.Puffed rice is light and easily digestible. Though it has more volume than regular rice, it contains less calories and almost no fat.so the people who are in diet can take this recipe. Try this Pori Upma and share your comments!

Ingredients :

 

  • 4-5 cup Puffed Rice (Pori)
  • 1 medium sized onion – finely sliced
  • 2 green chilies – finely chopped
  • 1/4 tsp turmeric powder
  • 1 tbsp lemon juice
  • asofoetida- a pinch
  • salt to taste
  • 1 tsp mustard seeds
  • 1 tsp urad dal (ultham paruppu / black gram)
  • 5-6 curry leaves

Method:

  1. Heat 1 tbsp oil in a pan or kadai. Tamper mustard seeds, urad dal and curry leaves. Add chopped onions and green chilies. Cook for a minute on low flame.
  2. Meanwhile, wash puffed rice in running water or fill a bowl with water and immerse pori in water. Squeeze out the water immediately. Separate the grains
  3. Add Pori, turmeric powder, asofoetida,  and salt to taste. Stir well for 1 or 2 mins on low flame. Garnish with chopped coriander and serve hot.
  4. At the time of serving, sprinkle lemon juice and garnish with coriander leaves……

Cheese ball

Cheese balls makes a great starter. Cheese Corn Balls recipe is a crunchy yet soft-centered deep-fried dish cheese ball is a great tasting dip. A delicious dip which contains cheese ..evryone from kids to elders will sure love this …. They make for a great party appetizer and you will have your guests noting down your recipe for cheese corn balls.

Ingredients:

  • 1/2 cup Cheese , grated
  • 1 Potato (aloo) , boiled and mashed
  • 1/2 cup Corn Kernels , boiled
  • 3 tablespoon Green Bell Pepper (Capsicum) , finely chopped
  • Coriander leaves (Dhania) , chopped
  • 1 tablespoon Red Chilli flakes
  • 1/2 tablespoon Dried oregano
  • 1/2 tablespoon Black pepper powder
  • 1/8 tablespoon Garlic
  • 1-1/2 tablespoon Corn flour
  • Salt , to taste
  • 1 tablespoon All Purpose Flour (Maida)
  • 1 cup Bread crumbs
  • Cooking oil , as required for deep frying.

Method :

  1. Rinse potatoes, cut into half and Pressure cook for 4 to 5 whistles.Peel off the skin,and mash it well.Set aside.Pressure cook sweet corn for 5 whistles with little salt and required water.Drain water completely and set aside.
  2. In a blender, add corn and blend it to a coarse mixture.Do this in batches and collect in a bowl.Add mashed potato,grated cheese,1 tbsp maida,cornflour, chilli flakes, pepper powder,oregano and required salt.
  3. Mix well to form a thick dough.Shape them into balls and arrange them in a plate.I just made few balls for click sake and reserved the rest for later use.
  4. Take 2 tbsp maida in a bowl , add little water and make a thick paste.Dip each ball in the maida mixture coat it well.Then dip it in breadcrumb mixture.Roll over to make sure it is coated evenly
  5. Heat oil, deep fry the balls in oil till golden brown.Fry in batches, I used my small pan so fried just 3-4 balls at a time.Drain in tissue paper. Serve hot  immediately with tomato ketchup or green chutney or mayyonaise…..
